Here's a sauce i make with the green tops of spring onions. Chop up and put the tops in a food processor with a tablespoon or 2 of Dijon mustard. You can also put in some coriander leaf or other soft herb like dill or parsley. Add a little salt, a splash of vinegar or lemon juice then turn on the machine and slowly stream in sesame oil, vegetable oil or a blend of the 2 (depending on what you'll be serving it with). Process while streaming and stop when you get a thick emulsion. Adjust the salt to taste (or use fish sauce or soy sauce depending on what you'll serve with it)
For a very simple and yummy meal you could make the version with sesame oil and soy/fish sauce and toss it through fresh egg noodles and top with boiled eggs and hakurei.
