runner beans and lemon

Here's a dish I have adapted from one I learned from an old man in Turkey. Heat a good glug of olive oil in a pan and add very thin slices of lemon (skin and all). Fry on a low heat until starting to go light brown. Add sliced onion and garlic and saute for a bit longer. Add runner beans, cut into thirds, some salt and then mix and cover the pan. Cook on a low heat until the beans are just tender. You could also add big chunks of tomato to this (when you add the beans) or save the tomatoes to make a salad with Thai basil, fish sauce, lemon and sesame oil. It's very good!
