Pasta alla Victoria

Would you like to try one of Bri’s favourite pasta dishes that I make for her if i want her to be very happy? It's a recipe that I learned from an old friend, Victoria, who we shared a house with when we lived in Seattle in the late '90s. 

Roughly cut up tomatoes and tear up basil leaves (you have to be generous with both). Glug over quite a bit of very good olive oil then mix in crushed garlic, crumbled feta or some other salty white cheese and salt to taste. Leave it to sit for about 1 hour. Slice zucchini thinly (maybe 3-5mm) saute in a hot pan with more olive oil until browned (but it has to remain crisp). Toss the cooked pasta (which you were cooking during the whole process 🤓) through the zucchini then dump the whole lot into the tomato mixture and toss through before serving straight away. We make fresh farfalle for this dish but you could use packet pasta.You could also substitute cubed/torn mozzarella for the feta. In this case it’s good to finish the dish with grated hard cheese (pecorino or parmesan) to get that salty cheese taste.
