Hola, it's salsa verde season! Here's my method for making it:
de-husk tomatillos and place them on a sheet pan. Grill in your oven (you can grill over a fire but you'll risk losing a lot of juice) until you have a small amount of charring and the tomatillos are soft.
Put in a blender or food processor (put in all the oozed out juice) with some salt, green chile (sorry - not ready yet!) and coriander leaves. Blitz until it's as chunky or smooth as you like. Fold in diced purplette or red onion and check the seasoning.
Serve on tacos or anything
