I made a dish for Christmas that Bri loved so much i made it again a few days later. It's nothing fancy just a good way to show how delicious veggies are when they're at their prime.
Fry some sliced purplette or spring onions in a good amount or quality olive oil in a wide pan. Add a lot of garlic, coarsely chopped, then once they're softened add the chopped runner beans and some salt. Cover the pan and cook on low for a couple of minutes. Add chopped zucchini stir and cover again. After another few minutes. Stir and check for doneness. You can keep it all firm or cool until it's soft and unctuous. Both are good. Add more salt to taste, a squeeze of lemon and some roughly chopped parsley. It's great to eat warm or cold.
