fried peppers Italian-style

Frigitello peppers, similar to shishito, can be cooked in a simple way to eat as a aperitivo or a side dish.




Heat a frypan till very hot (please don't use a non-stick pan for this, or anything), add a glug of olive oil. When it starts to smoke throw in the whole peppers (stems attached). Move them around occasionally but not too much as you want them to char and blister in places. Add some sliced garlic and salt and toss some more, until the garlic is just cooked. Remove from the heat and add some lemon juice or vinegar. The residual heat should evaporate the vinegar and, whilst you mix, the reduction will coat the peppers.

Serve hot with a drink. Pick up the pepper with your fingers, using the stem as a handle and bite the whole thing off (minus the stem). Yum!
