It's green curry season for us now. We don't grow everything that's required for the paste and the curry but a fair bit of it. Here's a link to Palisa's green curry recipe
I like to substitute fresh coriander seeds for the dried coriander seed - it gives a more floral note. I use brown onion instead of shallots and dried or powdered galangal if we can't get fresh. We also use our long skinny eggplant instead of all the amazing Thai eggplants that we can't grow here very well
Our chillies aren't quite ready yet but hopefully you can find some elsewhere.
