That sounds like 5 random words but it's not! The beaver dam peppers are a sweet pepper with a tiny hint of heat. They are great raw but also good in a sofrito to make rice dishes.
Dice the peppers and onion and fry in a wide pan in some olive oil. Add garlic and, if you like, some meat that can cope with cooking in liquid for 20 minutes or so (like chicken thighs or some sausage). Fry off till the meat browns and the sofrito is nicely coloured. Add a bit more olive oil and then some short grain rice like arborio or bomba or calasparra. We mostly just use Australian arborio. 1 cup of rice should serve a couple of people. Stir the rice and let it cook in the oil for a few minutes. Add stock - about 3.5 cups (per cup of rice) - shake the pan. Add cut up runner beans and press them lightly into the stock. Reduce the heat, add a little salt and then simmer (lid off) until the rice is aldente. It should still look a bit wet but after resting for a few minutes off the heat it will be moist but with no free liquid.
