Cavolo nero salad

 Try this with your young and super-tender Cavolo nero.

Tear up the leaves and put them into a bowl. Drizzle with olive oil, sprinkle on some salt and add a couple of cloves of crushed garlic. Use your hands and mix it all together thoroughly while massaging the leaves a bit to soften them up.  Just before serving, dress with a little bit of vinegar or lemon juice.
